Buffalo Chicken Mini Muffin Poppers


 

In honor of the 12th man…buffalo chicken dip is transformed into a popper. Very fun to make with Cole despite the loss. This recipe was made especially with the infamous Bake-Off® Contest in mind.  
Ingredients:



8 oz Pillsbury Crescent Rounds, rolled out into one rectangle
1 tablespoon Crisco® 100% Extra Virgin Olive Oil
4 oz reduced fat cream cheese
1 10 oz can white chicken meat in water, drained and shredded
1/3 cup hot wing sauce
1/3 cup ranch
1/4 cup shredded mozzarella

Directions:

Preheat oven to 375 degrees.

Roll out crescent round dough into one large rectangle. Using a small kid’s cup or small cookie cutter cut 24 rounds and press gently into a mini muffin tin greased with olive oil. Bake for 5 minutes.

In a small bowl combine cream cheese, chicken, hot wing sauce and warm for 1 minute or so in the microwave. Mix well.  

Using a small spoon form a center in each raised round. Stuff centers with a small spoonful of cream cheese chicken mixture. Top with shredded mozzarella.

Bake at 375 degrees for 5 minutes and broil on low for 3 more minutes.




The Pillsbury Bake Off is the biggest online contest out there so expect to see many more creations using their products. 1 million dollars…hello…why wouldn't you give it a try?
