I love making a big batch of tomato sauce to use all week! I like to make mine after work on a "leftover" night because it is done before I go to bed. You can get at least two dinners out of this recipe depending on what you make. My husband makes the meatballs and pasta and uses the sauce from the refrigerator. TEAM WORK!
6 medium tomatoes of any variety
2 tablespoons olive oil
6 cloves of garlic, minced
1 large onion of any variety, finely chopped
1/4 cup fresh Italian parsley, finely chopped
2 tablespoons fresh basil, finely minced or 1/2 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1. In a large pot of boiling water, place tomatoes in water briefly for about a minute. Remove tomatoes and cool with cold water. Core tomatoes with a knife and peel skin off. Place tomatoes in a blender and lightly puree.
2. In a medium heated pot with olive oil sauté onions. When almost done add garlic and cook until slightly browned. Add tomatoes, parsley, basil, garlic powder, onion powder, Italian seasoning, salt and pepper.
3. Mix well and cook for at least 6 hours on simmer or low heat.
4. Sauce is versatile and is great over pasta. You can also add ground meats or sausage before serving. Try freezing for future use.
