Sun-Dried Tomato & Feta Turkey Ball Stew

Bella Sun Lucci Sun Dried Tomatoes were required for this recipe contest. The boldness of the feta goes perfectly with the vibrant flavor of Sun Dried Tomatoes. 


3/4 lb ground turkey
3/4 lb ground turkey Italian sausage
1 cup bread crumbs
1/2 cup onion, finely chopped
1 cup feta crumbles
2 tablespoons Bella Sun Lucci Sun Dried Tomatoes in Olive Oil & Herbs – Julienne, chopped
1 egg beaten
1 tsp pepper
1/4 tsp thyme
3-4 cloves of garlic, minced
1 can French onion soup
4 cups beef broth
4 Yukon gold potatoes, skin on and cut into large chucks
1 cup of baby carrots chopped in half
6 ounces baby spinach


Preheat oven to 500 degrees.

Mix first 10 ingredients together well and shape into larger meatballs.

Bake for 15 minutes on a nonstick baking sheet and transfer to a large soup pot.

Add soup, broth, potatoes, carrots and spinach to meatballs.

Bring to a boil, cover and simmer for 30-45 minutes until veggies are barely tender. 

Serve with a hearty whole grain bread.

KID TIP: Kids love to help shape meatballs and who cares if they aren't prefect!
