Peanut Chicken Pearl Cous Cous

Having trouble deciding what to make for dinner tonight? Making your own peanut sauce is so easy and you can control the heat by adding more or less red pepper flakes. EAT THIS!


4 chicken breast halves, boneless and skinless, cut into 1/2” cubes
2 Tablespoons olive oil
1/2 Teaspoon fresh ground pepper
8 ounces fresh baby spinach sliced into strips
2 cups tri-color pearl cous cous
3 cups chicken broth
1/2 cup peanut butter
2 Tablespoons soy sauce
4 Tablespoons water
2 Tablespoons rice vinegar
2 Tablespoons dark sesame oil
1 Teaspoon crushed red pepper flakes 
½ cup chopped roasted unsalted peanuts


In a large frying pan sauté chicken cubes with olive oil over medium heat.

Sprinkle fresh ground pepper on chicken while cooking.

When chicken is almost done add sliced spinach to frying pan and reduce heat to low.

Prepare cous cous according to package replacing water with chicken broth.

In a small sauce pan heat on low peanut butter, soy sauce, water, vinegar, sesame oil and red pepper flakes stirring often. Stir often.

Add cous cous and peanut sauce to chicken and spinach mixture.

Mix all ingredients well. Serve with chopped peanuts on top.
