We had this super duper easy flavorful chicken in several different meals this weekend.

Saturday Lunch: Taco Chicken & Avocado Sandwiches
Sunday Breakfast: Southwest Omelets
Sunday Dinner: Chicken & Lime Enchiladas

4-6 boneless skinless chicken breasts
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon seasoning salt
1 teaspoon black pepper
1 teaspoon white pepper
1/2 teaspoon paprika
1/2 teaspoon chipotle
1/4 teaspoon red pepper flakes
1/4 teaspoon oregano
1 cup chicken broth
Put all ingredients into the slow cooker. Cook on high for 3 hours or low for 6 hours. Using a fork, shred chicken. Taco seasoned chicken can be used in a number of recipes.
KID TIP: The boys love helping measure seasonings…but sometimes they get a little too excited (especially little Cole). My tip is to let kids measure out and dump onto a plate in sections. This will prevent over pouring and allow you to correct if that happens. Little 2-year old Cole almost dumped the whole bottle of cumin out on the chicken!
