Cheddar Chard Quiche


Dreaming of sunny days and fresh food from the farm. My first attempt at quiche was inspired by a bunch of chard I received in my weekly delivery. After 6 weeks of chard....I had to start getting creative. This makes a wonderful breakfast, brunch or dinner. 


Ingredients:

1/2 bunch chard (any variety)                             
1/2 sweet onion
3 cloves garlic, minced
5 pieces Canadian bacon
1 tablespoon olive oil
Freshly ground pepper
Salt
4 eggs
1 cup skim milk
2 cups shredded sharp cheddar
¼ cup grated fresh Parmesan
Spray Vegetable Oil
¼ cup chopped chives
8 oz. sour cream

Directions: 

Preheat oven to 375 degrees.
Wash and dry chard, cut off ends of the stems and roughly chop.
Chop onion and mince garlic. Dice Canadian bacon
Heat olive oil in a fry pan over medium heat.
Add onion, garlic, chard and Canadian bacon to the frying pan and sauté until onion and chard stems are tender.
Meanwhile, grate cheeses.
Wisk eggs. Add milk and cheese. Fold in onion/chard mixture. Add pepper and salt to your desire.
Pour into pie dish coated with non-stick cooking spray.
Bake 35-45 minutes or until golden brown on top. 
Serve slices with a dollop of sour cream and topped with a sprinkle of chopped chives.
