Duck Eggs on Week Night

Enjoyed some duck eggs tonight for dinner. They were brought over by Nana from the salon she goes to. Why they sell eggs at a salon is beyond me, let alone duck eggs. Nevertheless they were quite the treat.

Surprisingly, the taste wasn't much different than a chicken egg. What was different was the size of course. Cracking the egg was very unique as they had very hard shells to get through. After in the pan they didn't look much different than a chicken egg. The super jumbo yoke was slightly richer but absolutely delicious.

We served our quick weeknight dinner of duck eggs over our spinach and feta potato fritters and pesto from Saturday. No prep and little mess on a week night make me a happy mommy. More time for snuggles and laughs.

When talking about eggs to little kids, ohhhh how the conversation can be entertaining.
“No, eggs are not like poop.”
“No, we didn't have to sit on you when you were an egg.”
“Ask your dad if we can have some chickens.”

Needless to say, no one complained at the dinner table tonight. One point for mom!
