French Toast Hammies

What a perfect brunch with my boys. Of course they ate their chocolate bunnies first! 
Last day for monthly Get Social with Mini Fillo Shells contest...made it!


30 Athens Mini Fillo Shells (2 boxes)
3 eggs
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 cup sliced honey ham, finely chopped


Preheat oven to 350°F.

In a small bowl, mix eggs, vanilla, cinnamon and ham.

Line a cookie sheet with aluminum foil.

Dip the tops of each mini shell in the egg mixture and place on the cookie sheet.

Fill each shell with one spoonful of egg and ham.

Bake for 15 minutes or until shell rims are golden brown.
