Homemade Baked Chicken Nuggets

I said baked – not fried! You better believe I had no complaints at dinner when I said we were having chicken nuggets. I have always wanted to make these, but there are so many recipes out there for chicken nuggets. Most call for deep frying, but I just can’t do it! These chicken nuggets are so easy and full of flavor minus the grease.


1 ½ lbs chicken breasts, cut into bite-size cubes
1/2 cup Italian bread crumbs
1/4 cup grated Parmesan cheese
1/4 teaspoon white pepper
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon seasoning salt
2 tablespoons olive oil
2 tablespoons butter


Preheat oven to 400°F.

In a large bowl mix all dry ingredients.

Add the chicken and coat with the mix until chicken is well coated. 

Melt butter and mix with olive oil. Pour over chicken and coat breaded chicken in butter sauce.  

Bake for 20 minutes on a greased cookie sheet and broil on low for the last three minutes. 


  1. Do you think you could make these ahead and freeze?

    1. Gosh I am not sure! I don't think the breading would stay on very well, but could be wrong.
