Memorial Day is approaching and here in Washington we grill rain or shine. This Memorial day we will be taking the boys to a baseball game for their birthdays. I must take lots of pictures of all the food we eat (oh and the boys too)! Despite the fun we will have on this day off together we won't forget to remember the reason we "celebrate" this day.
If you plan on remembering those that served our great country with family and friends gathered around the grill, how about cooking up these stuffed chicken burgers?! I first made these the "Build a Better Burger" contest and I want one just looking at this picture. We all know the balsamic, mushroom and goat cheese combo goes great together, but the ground chicken serves as a great base for this proven flavor blast.

Birthday party approaching…and there is much “to do” on our list. Big brother Liam is turning 7 and Cole is turning 3. If the weather holds out, we will be celebrating at a local park. We will be playing games like sack races, three legged races, Frisbee disc golf and horse shoes for kids. I haven’t come up with plan “B” if it rains!?!?!?!

I have always been intrigued with the chicken and waffle craze, but I have to say I have never tried before. This sandwich takes that concept to a whole new level. Parmesan fried chicken breast meets whole wheat cheddar waffles grilled with creamy Havarti cheese and topped with spicy brown sugar bourbon syrup. Oh yes I did that!

I am in love with the Grilled Cheese Academy contest! I just heard about it so I am a little sad I don’t have a lot of time. Man oh Man! The ideas have been circling all week for this contest. Today was grocery day so I needed to make up my mind quickly. I decided to make two sandwiches this weekend for this contest. The prize package is huge and includes cash and cookware.
For my first entry I figured I should go with the “winning” combination of Bruschetta and Italian Chicken Sausage. For those that aren’t aware of my five minutes of fame…this combination got me into the finals for the 2012 Reser’s America’s Best Potato Salad Recipe contest. It also got me $1,000 and a trip to Vegas with my most awesome mom.

This dinner was so easy I could make it on a week night – and that is saying a lot! Almost a one pot wonder, if you are looking for high protein and low carb meal, this does the trick and you won’t miss the lack of bread on the plate. Liam loved the shrimp and Cole liked the beans, but we giggled at the fact they thought they were eating mashed potatoes! Make sure to adjust the Blackening seasoning level to you or your kids liking.
