Grill Roasted Goat Cheese and Sweet Onion Scallop Potatoes

Yes. Scallop potatoes on the grill. I never would have thought this would have worked. I just chopped it all up (what I had in the fridge), put it in foil, set it on the grill for about 45 minutes and opened up a masterpiece for dinner.

Sliced baby red potatoes mixed with sweet onion and turkey sausage is delish on its own, but this is really kicked up a notch with spinach, goat cheese, garlic and lemon juice. The moisture from the vegetables and sausage mixed with the melted goat cheese to make a beautiful sauce. This was really a full meal deal, prepped the night before and ready for the weeknight dinner table with no effort and barely any clean up.
