Quick Fix Alert! Have a basil plant growing out of control right now? Make pasta! If you are like me, you have chicken breast, tomato, Parmesan and garlic always on hand. Bring creamy brie cheese and basil into the mix and you have a complete dish. We used and love mini penne, but you can use many other small pastas.
1/2 cup olive oil
10 ounces brie, cubed
1 cup tomatoes, chopped
1/4 cup fresh basil, chopped
3 large chicken breasts
1 teaspoon black pepper
1/2 teaspoon sea salt
1 lb penne pasta
4 cloves garlic, minced
1/4 cup Parmesan cheese, grated
Heat grill to medium heat. Lay out chicken breasts and spread salt and pepper on both sides.
Grill chicken to moist perfection (about 7 minutes per side depending on size). When down let rest at least 5 minutes before slicing.
Cook pasta as directed.
Put garlic, olive, oil, brie, tomato and basil in a large bowl.
Add cooked pasta to large bowl.
