Cheesy Broccoli Mash Cups


These little mashed potato cups make the perfect side dish or appetizer. If you are watching your waist you can easily control your portions and indulge with just a couple bites. These were super easy to make. You can use leftover mashed potatoes or whip up some instant potatoes like I did. The kids loved these.

Ingredients:

30 Athens Mini Fillo Shells
1/2 cup prepared mashed potatoes
1/4 cup broccoli, finely chopped
1/4 cup smoked cheddar, shredded
1/2 teaspoon black pepper

Directions:

Preheat oven at 350ºF.

Mix all ingredients in a medium bowl.

Fill Athens Mini Fillo Shells with a spoonful of cheesy broccoli potatoes.

Bake filed shells for 20 minutes. Broil on low for the last 5 minutes for a browned top.
