Creamy Lemon Garlic Orzo

What a perfect side dish for any meal. So quick and I had everything on hand and readily available. What was even better? The kids loved it – phew! We enjoyed this simple and delicate dish with grilled pork tenderloin and green beans.

2 cups orzo pasta
3 tablespoons olive oil
2 tablespoons garlic, minced
1/2 cup parmesan, grated
1/4 cup milk
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons Italian parsley, chopped

Cook pasta as directed, drain and set aside.

In a large skillet heat olive oil over low heat, stir garlic in and cook until lightly browned, about 3 minutes. Stir orzo into garlic mixture and mix in Parmesan cheese, milk, lemon juice, salt, black pepper, and parsley.
