Balsamic Grilled Shrimp



Not much to say here, but I will take a plate full of these any night. Shrimp have a bad rap at times due to the “farming” of shrimp and the fact that they are high in cholesterol. Sometimes overlooked is that they are full of protein, vitamins and even nutrients that are proven to help food cravings. Recent studies even indicate that although they are high in cholesterol, shrimp cholesterol may not be that bad for you. In fact they are high in “good fats,” or omega fatty acids. Plus, they pack a protein punch!

Easy & Light “Chicken Parmesan”


My light dinner self-induced challenge has been going strong all year (however, it’s still January). This dinner was another hit in our house. A new way to enjoy the traditional chicken parmesan, with no parmesan - I know?! This is almost a crime. Please also note the lack of pasta. Carbohydrates really get a bad rap when trying to shed a few pounds or eat healthy, but they are significantly better for you than processed pasta. When one child asks for more, you know it was worth it! I prepped everything on Sunday, ready to bake on Monday after work.

Veggie Tots with Balsamic Chili Dipping Sauce


Aren’t these so cute? Sure they aren’t exactly tater tots, but they are tots! And my tots loved these. Watching them chow down on veggies like tater tots made my day. Yes! Moments like this make my day. I love creating unique meals and especially love creating unique meal packed with nutrition my kids will actually eat. They didn’t indulge in the balsamic chili dipping sauce, but we loved the extra creamy punch!

Slow Cooker Three Bean and Lentils Turkey Chili


Made this today while watching the Hawks! After it was done I immediately packed up 4 servings for lunch (2 for me and 2 for my husband). My husband is supposed to eat a high fiber diet (we all should) due to a previous illness and surgery as well as high cholesterol. This recipe is PACKED with fiber and protein.

Honey Dijon Chicken Butter Lettuce Wraps


Naturally with the beginning of the year we are all trying to eat a little better…well some of us are! This creation includes grilled chicken with a creamy country Dijon and honey dressing with crunchy veggies. Even one of my boys liked this one!

Brewed Chicken Fajitas


Does it make any sense that I have been dreaming about this recipe for a long time? I know…I am ridiculous. Lately I have been trying to avoid beer (that is hard), but with just a 1/4 cup for the whole meal can’t be too bad! Any kind of beer will work, dark is best, we used an Espresso Stout and that worked out great. Everything tastes really fresh and the veggies have a bit of a crunch. This recipe made for excellent lunch leftovers.

I ate this for dinner and noting else – all food groups are represented…so why not? You’ve heard of potatoes au gratin…now enter cauliflower minus the potato. Such a fabulous side dish minus the excessive carbs.
