Naturally with the beginning of the year we are all trying to eat a little better…well some of us are! This creation includes grilled chicken with a creamy country Dijon and honey dressing with crunchy veggies. Even one of my boys liked this one!
1 lb boneless, skinless chicken breasts
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 cup non-fat Greek yogurt
1 tablespoon country Dijon
1 tablespoon honey
3/4 cup carrot, chopped small
1/4 cup green onion, finely chopped
1 head butter lettuce leaves
Slice chicken breast lengthwise making thinner pieces.
Mix olive oil, vinegar, pepper, salt and garlic powder. Brush over chicken and let marinate for at least an hour. I like to marinate overnight or in the morning for the next day. J You could use a low-fat vinaigrette in place of making your own marinade.
Grill chicken over medium-high heat for 5 minutes on each side, or until done, and let rest for 5 minutes. Chop chicken into really small chunks.
In a large bowl mix yogurt, Dijon and honey thoroughly. Add chicken and vegetables to the yogurt mix. Mix everything well.
Serve creamy honey Dijon chicken mix on the butter lettuce leaves. Eat “wrap” or “taco” style.
