Slow Cooker Three Bean and Lentils Turkey Chili

Made this today while watching the Hawks! After it was done I immediately packed up 4 servings for lunch (2 for me and 2 for my husband). My husband is supposed to eat a high fiber diet (we all should) due to a previous illness and surgery as well as high cholesterol. This recipe is PACKED with fiber and protein. 


1 lb ground Turkey
1 15.5 ounce can cannellini white bens
1 15.5 ounce can red kidney bens
1 15.5 ounce can black bens
1 cup lentils
2 cups low sodium chicken broth
4 ounce can diced green chilies
1 orange bell pepper, diced
1 small sweet onion, diced
2 Roma tomatoes, diced
6 green onions, chopped
3 cloves of garlic, minced
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon chipotle chili powder (optional heat)
1/2 teaspoon cayenne powder
2 tablespoons cilantro, chopped


Place all ingredients in the slow cooker and mix well. 

Cook on high for 4 hours or low for 6 hours. Add cilantro and mix before serving. Top with non-fat plain Greek yogurt and cheese. If you like a little heat top with some freshly chopped jalapeƱo.
