Aren’t these so cute? Sure they aren’t exactly tater tots, but they are tots! And my tots loved these. Watching them chow down on veggies like tater tots made my day. Yes! Moments like this make my day. I love creating unique meals and especially love creating unique meal packed with nutrition my kids will actually eat. They didn’t indulge in the balsamic chili dipping sauce, but we loved the extra creamy punch!
1 1/2 cups grated raw cauliflower
1 1/2 cups grated raw broccoli
1/3 cup flour
1/2 teaspoon seasoning salt
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
3 tablespoons non-fat plain Greek yogurt
Cooking oil spray
1 cup bread Italian crumbs
Preheat oven to 400°F.
Mix all ingredients, except for the bread crumbs, together until well-blended.
Spray a foil-lined baking sheet with oil.
Create tater tot shapes with your hands and then gently roll around each tot in the bread crumbs to lightly coat.
Gently place the tots onto a greased foil-lined baking sheet.
Bake for 30 minutes, flipping half way through. Lightly spray them with cooking oil and broil on low for 3-5 minutes until lightly brown.
TIP: Be careful, these tots are delicate. I recommend exclusively creating the tots first, before rolling them all in bread crumbs because your hands get coated. After flipping half-way through, lightly pat them down a little for the second half.
Optional Balsamic Chili Dipping Sauce:
1/2 cup non-fat plain Greek yogurt
1 teaspoon balsamic vinegar
1/4 teaspoon chili powder
Mix all ingredients well.
