Mini Taco Cupcakes

Pizza was on the menu for a recent family gathering. This temptation was killing me even days before the event. I decided to make something small to snack on instead of pizza. Most of my husband suggestions are a super fattening, but he suggested a taco bite. I prepped everything during a lunch break, assembled and baked right before the party! These are so good – no joke.


Spray Cooking Oil
1/2 lb lean ground turkey
1 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon red pepper flakes
1/4 teaspoon cumin
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
3 ounces spinach
Gyoza wrappers (24)
1 cup low fat refried black beans
1 cup low-fat cheddar jack cheese grated
1 cup non-fat plain Greek yogurt
1/4 cup tomatoes
1/4 cup green onions


Spray oil in a medium skillet and brown turkey over medium-high heart. Add spices and spinach to the turkey and cook for 2 more minutes and set aside.

Preheat oven to 400°F.

Spray a mini muffin tin with cooking oil. Gently press Gyoza wrappers into individual mini muffin tin spots.

Layer each spot with one spoonful of beans, turkey and top cheese. Bake the cups for 15-20 minutes or until wrappers are browned well.

Top with yogurt, tomatoes and green onions.
